North Country Recipes from Grandma Hattie
Recipes have been handed down in our family for generations. These recipes are down-home, farm-style since our family has lived in the Brant Lake area for nearly 50 years, and in the Hudson Valley area since the founding of the country. Grandma Hattie, who turned 92 this summer, currently keeps the family recipes. Many of them are on hand-written cards she inherited from her mother. (See the picture on the right of an original recipe card.) They grew up on the family farm in McKownville, NY before moving to Albany. The 2-family farm house that we believe our great-grandfather built in the late 1800's is still standing and occupied.
Three cookie recipes are described below. We baked them in Grandma Hattie's Brant Lake kitchen and served them at a large family gathering in July.
Recipe 1 - Icebox Cookies
- 1 cup of margarine
- 2 cups brown sugar
- 2 eggs

- 1 teaspoon baking soda in a little water
- 1/2 teaspoon salt
- 1 cup chopped nuts
- 3 1/2 cups flour
- 1 teaspoon vanilla
Cream butter and sugar. Add eggs well-beaten. Continue to beat. Add flour, salt and baking soda. Add nuts to mixture.
Form long roll wrapped in wax paper. Leave in refrigerator over night. Slice long roll and Bake at 350-375 until golden brown.
Recipe 2 - Lemon Cookies
- 1 cup margarine
- 1 cup sugar
- 2 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1 6 oz can lemonade thawed; save 1/2 for cookie tops
Add 1/2 of thawed lemonade with dry ingredients. Mix as usual. Drop cookies onto baking sheet. Cook 350 degrees for about 8 minutes. Brush hot cookies with remaining 1/2 can thawed lemonade and sprinkle with sugar.
Recipe 3 - Orange Cookies- 3/4 cups of sugar
- 1/2 cup of butter or crisco
- 1 egg
- 1/2 cup buttermilk or sour milk
- 2 cups flour
- 1/2 teaspoon baking soda
- 1 and 1/2 teaspoon baking powder
- 1 cup nuts OR fruit chopped
- 1 orange - save 1/2 for frosting
- 1/2 teaspoon vanilla
- FROSTING: combine confectioners sugar and orange juice
Mix all ingredients and spoon onto cookie sheet 2 inches apart. Bake at 350 degrees for 12 minutes. Spread powered confectioners sugar mixed with orange juice on warm cookies.
